Watermelon Salad…Impressive Looking…So Simple!

Refreshing and Easy, Watermelon Salad

A year or two ago, my daughter had dinner at the RenCen in Detroit and told me about this great salad she had that night. She asked me if I could make it for our next dinner, which I did. I was struck by the combination of the savory and sweet onions, the freshness of the sweet watermelon, the peppery arugula, and the special flavor of the goat cheese. It is now one of my very favorite salads.

Last week I gave you the recipe for caramelized onions, partly in preparation for this week’s salad recipe. Actually, you can hardly call it a recipe –  it’s so simple – yet it’s impressive enough to serve to guests.

Watermelon Salad

  • Servings: 6
  • Difficulty: Easy

Ingredients:

  • Baby Arugula
  • Caramelized Onions
  • Watermelon (cut into small pieces)
  • Goat Cheese (plain works best; I bought it already crumbled)
  • Balsamic Vinaigrette (in a bottle or made at home)

Steps:

  1. Put arugula in your salad bowl
  2. Top with caramelized onions
  3. Add watermelon
  4. Sprinkle goat cheese on top
  5. Dress with vinaigrette
  6. Serve

See, it couldn’t be simpler. Try it next time you have guests. You will be surprised at their reaction…you won’t believe how something this simple can be so good!
