Chicken Veggie Packets
Here is the last of the three foil packet dinners I’ve been posting. When you see the ingredients you will see how easy it would be to substitute your favorite vegetables for any of those listed. And, if you like to play with seasonings, here’s your chance. Give them a try and see which one you like best.
Chicken Veggie Packets
Ingredients:
- 1 pound chicken tenders (or 4 chicken breasts)
- ½ pound sliced fresh mushrooms
- 1 ½ cups fresh baby carrots
- 1 cup pearl onions (or red onion, sliced)
- ½ cup julienned sweet red pepper (or any color you choose)
- ¼ teaspoon pepper
- 3 teaspoons minced fresh thyme (or one teaspoon dried thyme)
- ½ teaspoon salt
- Lemon wedges (optional)
Steps:
- Pound tenders to ½ inch, or less, thickness.
- Place two tenders or one breast on a piece of foil about 12″ square.
- Layer mushrooms, carrots, onions, and red pepper over the chicken.
- Sprinkle with salt, pepper and thyme.
- Fold foil around chicken and vegetables and seal tightly. Place on a baking sheet.
- Bake at 375°F for 30 minutes, or until chicken reaches 165°F. If desired, serve with lemon wedges.
